- Chop the coriander, the chilli and the peppers and add these to the pan, fry for another 5 mins
- Break up the salmon and put this into a big mixing bowl
- Drop the contents of your frying pan into the bowl, crack in the eggs, sprinkle in the nutmeg, stir and then put this into an oven proof baking dish
- I covered the bake with grated mozzarella for a nice topping
- Bake for 25 mins, so that the mozzarella is golden and crispy!
