  4. Add the ketchup and soy sauce a stir well. Reduce heat slightly and allow to simmer for 10-15 minutes, until the sauce thickens.
  5. Line a deep baking tray with foil and add the ribs. Season with salt and pepper.
  6. Cover the ribs with the bbq sauce.
  7. Cover the tray with foil and transfer to oven. Cook for 2 hours to 2 hours and half. Remove the foil for the last 30-45 minutes.
  8. Allow the ribs to rest for 15 minutes to cool down enough to handle.
