  16. Make ready 1 lemongrass cut in two
  17. Make ready 2 kafir limes, dont use the stem
  18. Prepare 2 bay leaves
  19. Take 1 corriander leaves - slices thin
  20. Prepare 2 tomatoes - cut square
  21. Get 3 spring onion - slices thin
  22. Prepare 1 plastic basil - dont use the stem
  23. Take 1 pandan leaves
  24. Get 500 litre water
  25. Get 3-4 tbsl Oil or as needed
  26. Prepare 1 tbsp sugar or less
  27. Make ready 1 tsp himalayan salt
  28. Get 1 stock chicken cube
  29. Prepare 1 tsp white pepper
  30. Take Optional: 5 red chillies

Ayam rica-rica is specialty chicken dish from the city of Manado in Indonesia North Sulawesi. Rica means chili in North Sulawesi language, so ayam rica-rica translates to chicken with chili sauce. AYAM RICA RICA (SPICY MANADO CHICKEN) Ayam means chicken and rica means hot spicy. Ayam rica rica is originated in the city of Manado in the island of Sulawesi.

Steps to make Spicy chicken - Ayam Rica rica:
  1. Prepare wok, put some oil. When its hot, fry the chicken (skin down in wok). It doesnt need to cooked through, just make sure all looks bit brown outside. Set aside
  2. With the same oil, throw in the blended stuff, stir fry in medium high for about 5 minutes
  3. Add lemongrass, bayleaves, kafir limes, pandan and corriander leaves. Stir fry till colour change to bright. This will take about 10 minutes
  4. Add the water, stir well and add the chicken. Stir well again and leave this in medium heat for about 20 minutes (add thai chillies here if you used it).
  5. When the water start to evaporate, put the tomatoes, salt, sugar, white pepper, chicken cube. Taste it and cook for another 15 minutes. You be able to tell as the colour will change and its thicker.
  6. Last, when you happy with the taste, add the spring onion and basil, stir well and turn it off. Enjoy πŸ˜‰
