- Then scrape out the butternut squash and keep the flesh. Make a hollow hole in both halves
- In a mixing bowl, add your 2 tbsp of all the veg, including the squash and cheese. Mix them all together with a spoon. Add a small tsp of virgin olive oil to the mix and mix well.
- With a spoon, add half the mix to the one half and pat down so it's stuffed. Repeat with the other half.
- Put them on a tray and add to a preheated oven 170Β°C / gas 6 for 20 - 30 mins.
