Pour the chicken mixture into a deep pie pan or small casserole dish. Place the crust on top of the chicken mixture and cut small slits. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed.

  5. Add the chicken to the sauce and make sure it's all covered.
  6. Drain the potatoes and mash and then add the butter and milk until smooth.
  7. Add the chicken into the dish and add the mash on top. You can pipe it on or put it on with a fork and flatten it but not too much or the heat wont get through.
  8. Add the extra cheese on top and cook until golden brown. Let it cook a little bit until serving.

Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Drop the batter by spoonfuls over the chicken mixture, then bake as directed. Place potatoes and carrots in a large saucepan; add water to cover. I always have leftover chicken broth on hand and use it for many things, including this comforting and easy chicken pot pie casserole.
