- Dice carrots, potatoes and spring onions. Mince garlics and ginger. Season the diced chicken breasts with 2 tbs soy sauce, sugar and sesame oil. If you are using chicken thighs, you may skip the seasoning step.
- Add cooking oil, then add white part of spring onions, ginger and garlic till fragrant. If you use chicken thighs, you will pan fry the thighs first.
- Add potatoes and carrots and stir fry for about 5-7min, then add chicken breasts and fry till they are semi cooked, then add 1-2tbs of soy sauce. Stir fry till the soy sauce is boiling. Add water and bring to boil. The, let it simmer till the water cooked down to 1/2.
