I use green capsicums for this as it does not have the sweetness of the red or yellow variety. If you like that taste, then go ahead and substitute this with that, or even use a medley of colours to make the dish look pretty. Wash and dice the capsicum into medium sized pieces.

Capsicum fry recipe - A super quick and delicious dry capsicum curry that makes a good side dish in a Indian meal. It is so good to serve with rice or chapati. This capsicum fry is very uniquely flavorful, healthy and easy to make as well.
Steps to make Dry Capsicum:
- Wash and the onions & capsicum in cubes.
- Heat a pan and add 1 tablespoon butter to it. Further add the bay leaf, cumin seeds, garlic, green and red chilli. Cook for a couple of minutes.
- Then add the veggies and cook until the onions turn golden brown and the capsicum softens.
- Next add all the spices mentioned above i.e red chilli powder, turmeric powder, coriander powder, garam masala powder and salt.
- Cook for another 4-5 minutes. Then add the malai to it.
- Mix well for a couple of minutes. And lastly add the aamchoor powder and give a good mix.
- Finally take them out in a bowl and have it with kachori.
It is so good to serve with rice or chapati. This capsicum fry is very uniquely flavorful, healthy and easy to make as well. Capsicum is a bit tricky, as the edges curl significantly when drying.
