Instructions to make Veg Chowmein:
  1. In a big pot, add 8-10 cups water and put it on high heat. When it starts boiling, add some salt and oil to it and add noodles to it. Now boil noodles for 5 to 7 minutes until they are just done. Keep stirring occasionally in between. Make sure that noodles are not boiled too much otherwise it won't taste good. When it is done, strain the water and take it out in a colander and give it a wash of cold water. Add a little bit of oil into it and mix it well so that it does not stick to each other.
  2. While noodles are boiling, wash and prepare all the vegetables.
  3. Heat oil in a pan and add chopped garlic, ginger and green chilli. Saute it until garlic is light brown in colour. Now add all the veggies and stir fry them for 2 minutes on high heat. Now add salt, pepper, soy sauce and vinegar. Mix everything well.
  4. Add prepared noodles to the vegetables and mix it nicely. Cook it on high heat for 2 to 3 minutes then add chopped spring onion to it and turn off the heat.
  5. Serve veg chowmein with any vegetarian or non vegetarian chinese style gravy.
