Long grain Basmati rice is cooked in ghee, spices, saffron, and milk and mixed with fried onions, dried and fresh fruit. Serve this fragrant pulao solo or as a side with other dishes. Steps to make Dry Fruits Pulao:
- Wash and peel and chop onion. Cut paneer in small pieces. Grate tomatoes. Assemble all dry fruits.
- Wash and Soak rice in water for 10 minutes. Then put it in a pressure cooker. Add salt, turmeric powder and water and pressure cook till 2 whistles. Switch off the flame and let pressure releases automatically.
- Heat oil in a karahi. Deep fry cashew nuts and almonds till golden and remove in a plate. Fry paneer pieces till golden brown and remove in a plate.
- Now in remaining cooking Oil add cumin seeds and when cumin seeds splutter add chopped onion and fry till golden brown colour. Add cardamom, cloves, cinnamom and saute for 1 minute.
- Now add grated tomato puree and cook till oil leaves the karahi.
- Add red chilli powder, turmeric powder and salt and mix well. Add fried paneer and dry fruits and mix well.
- Now open the lid of pressure cooker and add boiled rice and mix in well with tadka and cook on low flame for 2 minutes. Switch off the flame. Squeeze half lemon and stir.
- Serve hot with salad and Raita.

The fresh fruits which are usually added in Kashmiri pulao are pineapple, apple and pomegranate. Dry fruits which are added are generally a mix of almonds, raisins, pistachios, walnuts and cashews.
