Instructions to make Veg pockets:
- For stuffing:- In a pan heat oil. Add cumin seeds. When crackles add chilli garlic ginger paste and saute for sometimes.
- Add chopped onion and saute till onion turns translucent. Add cabbage, carrot and capsicum. Add salt and turmeric powder. Saute for 3-4 minutes. Don't over cook. Add boiled green peas and mix well. Add red chili powder, dhania jeera powder, garam masala powder and amchur powder. Mix well.
- Add boiled and mashed potatoes, grated paneer and chopped coriander leaves. Combine all ingredients well. Stuffing is ready. Cool down at room temperature.
- For dough:- in a mixing bowl take wheat flour and all-purpose flour. Add salt and oil. Mix well and knead little soft dough with enough water. Rest for 15 minutes. Then prepare equal size of balls from it and roll out rotis. Roast all rotis kachha pakka on tawa without oil or ghee.
- For making pockets:- Take a roti. Put enough stuffing on it. Fold roti with one side. Apply flour slurry at edges. Fold it opposite side and stick both sides together.
- Same way apply slurry on other two sides and fold and stick them. Make all pockets like this. Cook pockets on grill pan or griller with oil on both sides till golden spots appears. Veg pockets are ready to serve. Serve with tomato sauce.
