  2. Cut the butternut squash into strips (0.5-0.75 inches thick). Start by cutting off the two hard ends. Then cut the pumpkin in half lengthwise and peel each half. Remove the seeds with a big spoon, then cut into strips lengthwise. Line the pumpkin strips on the baking sheet.
  3. Prepare the coating by mixing olive oil with garlic, thyme and a pinch of salt and pepper. Brush it on the pumpkin strips.
  4. Bake until tender. It will take about 20 minutes (but start checking the pumpkin with a fork after 15 minutes). Serve directly.

You can cut the roasted pumpkin into cubes and toss them into a salad, or use them in a curry, soup, or stir-fry. And of course, you can also purée roasted pumpkin in a food processor or blender and use it to bake bread, cookies, pies, and tarts. Puncture the outer skin of the pumpkin with the tip of a large chef's knife. Set the knife into the groove created by the puncture and slowly sink the knife into the pumpkin using a rocking motion. The thicker your slices, the longer your pumpkin will take to roast.
