  1. To make the filling: mix coconut sugar/palm sugar, water and vanilla extract in a pan over low heat. Cook until the sugar dissolved and thicken like syrup. Add the grated coconut and salt into the sugar syrup and continue cooking on low heat until the coconut filling is thick and glossy.
  2. The Pancake skin: sift the flour and salt into mixing bowl, pour in egg, coconut milk, water and mix all until well incorporated. Make sure it’s smooth batter and no lumps.
