- Prepare 1 🌻Whole spices :
- Prepare 1 tsp cumin seeds
- Prepare 1 Tbsp coriander seeds
- Take 2 Tbsp fennel seeds
- Take 1 inch cinnamon stick
- Make ready 1 black cardamom
- Prepare 3 green cardamom
- Take 3 cloves
- Make ready (Roasted and grind all spices)

- Get 1 tsp red chilli powder
- Prepare 1/2 tsp turmeric powder
- Take salt to taste
- Take 🌻Chicken Nihari Ingredient:
- Make ready 500 grams skinless boneless chicken –,cut into pieces
- Make ready 1/3 cup oil
- Prepare 1 medium onion –,finely chopped
- Prepare 2 & 1/2 Tbsp Whole spices powder – (given above, you can also use ready spice mix)
- Get 1 Tbsp ginger garlic paste
- Take 1 Tbsp green chilli paste
- Take 1/3 cup wheat flour or white flour
- Get as needed Water
- Prepare 2 Tbsp Lemon juice
- Prepare 4 Tbsp ghee or butter
- Take 1 tsp Kashmiri chilli powder
- Make ready 🌻Garnish
- Prepare 1 inch ginger –,cut in julienne Fresh
- Take coriander –,finely chopped
- Make ready 4 lemon wedges
Instructions to make Chicken Nehari:
- 🌻For Nihari Masala - In a pan roast whole spices for 30 second then add powdered spices. Roast for another few second and remove from heat. - Transfer to a food processor and grind finely. Store spice mix in air tight jar until needed.
- 🌻For Nihari: - Heat oil in a pot and add chopped onion. Stir and cover the lid. Cook for 5-7 minutes on medium heat until very soft. - Now, add chicken, Nihari spice mix, ginger garlic paste, green chilli paste and fry well till oil leave the pan then add 1 cup water. Mix well and cook for 10-15 minutes. - In another pan, roast wheat flour for 1-2 minutes on medium heat until fragrant. Transfer flour to a bowl. Add 1 cup water to wheat flour and mix well without any lumps
- Add wheat better in the chicken pot and stir continue. - Add 1 cup more water and lemon juice. (Add less or more water as needed, Nihari should have desired consistency at this point). - Mix well and cover the pot. Let it simmer for another 5 - 10 minutes on very low heat until bubbling hot. Nihari is ready.
- 🌻To serve: - Heat 4 tbsp of ghee on a pan and add a 1 tsp of Kashmiri chilli powder. - Pour heated butter in pan garnish and serve with lemon wedges and naan.
- ✅Notes: - Try to make Nihari 4-6 hour ahead and let it sit for several hours for enhanced flavours.
