  3. Add onion and sweat on low heat, 5 minutes under lid
  4. Add ginger and red pepper and sweat for ca 3 minutes
  5. Finally add mango and sweat another 3 minutes
  6. Stir in rest of ingredients then let simmer for ca 30 minutes
  7. Its done when consistency is looking right for chutney.
