Steps to make Crispy Potato Cajun:
- Firstly, in a bowl take 15 baby potato, wash them nicely now transfer to pressure cooker and add salt and cook for 2 whistles or until potatoes is 90% cooked.
- Remove the potatoes, press them gently and flatten slightly. keep aside.
- In a small bowl mix all ingredients from "For crispy potato" Except from butter and water. - Now add water and mix well forming a smooth lump-free batter. - now dip the boiled potato into slurry coating uniformly. - shallow fry the potatoes on medium flame. - fry both the sides until the potatoes turn golden brown and crisp.
- Add ½ tsp butter in oil and fry to have a buttery flavour. keep aside. (This step is optional)
- Now in a bowl mia all the ingredients from "Cajun Sauce" Section except milk. Mix it nicely. Now add milk and mix them to get a smooth flowing Cajun sauce.
- Let's serve… In a plate place fried crispy potato. (leave some gap in between)
- Pour a good amount of cajun sauce over it. - sprinkle onion and coriander, chilli powder.
