- Thin cut the potato. I used a mandolin. Place the potato slices in cold water.
- Rinse the potato to remove excess starch.
- Chop the onion and add to a pan with the garlic and a dash of oil. Cook until the onion softens.
- Add the meat and cook until brown.
- Add the tomatoes, peas and sweetcorn. Also add the gravy if you are adding it.
- Simmer for 10 minutes. While the meat is simmering steam/boil the potato until the slices just start to go soft.
- When cooked, cool the potato by adding it to a bowl of water.
- Place a third of the meat in the bottom of a large oven dish. Cover with a layer of the par cooked potato. An option here is to cover the potato with cheese.
- Repeat twice more. Then cover the top layer with cheese.
- Place in the middle of an oven pre-heated to 200c. Cook for 30 minutes. Turn the oven down to 160c and cook for another 30 minutes. Until the top is crispy.
