The ingredients needed to make Crispy Karanji:
  1. Take 3 cups Grated coconut
  2. Make ready 1 1/2 cup Powdered sugar
  3. Get 1 cup Semolina
  4. Take 2 tbsp Poppy seeds
  5. Get 1 cup roughly chopped Mixed Dryfruit (Almonds, Cashews, Raisins)
  6. Make ready 1 tsp cardamon powder
  7. Take 2 tbsp pure ghee
  8. Get For Karanji Dough-
  9. Prepare 300 gms all-purpose flour
  10. Get Pinch salt
  11. Make ready 4 tbsp pure ghee
  12. Get As Required Water
  13. Get as required Oil for frying
Steps to make Crispy Karanji:
  1. Ingredients required-
  2. Heat a pan add pure ghee let it gets melted. Now add semolina & poppy seeds and roast it for 4-5 minutes till it turns pink. Then add grated coconut and roast it too for a few minutes.
  3. Now again in a separate pan add desi ghee and shallow fry the Dryfruits(Almonds, Cashew and raisins)
  4. Let the mixture cool down. Now in a bowl add Roasted mixture of grated coconut & semolina and add sugar and cardamon powder to it and add fried Dryfruit and mix well.
  5. In a bowl add all-purpose flour, oil and make dough with the help of little water. Once dough is kneaded keep it aside for an hour to rest.
  6. Take a small portion of dough and roll the dough round in 4-5 inches diameter circle.(bit thick)
  7. Now place this rolled round in karanji mold and add 1 tbsp of the filling like this. Apply little water on edges of the round and Close the mold and remove the excess dough and shape it properly.
  8. Around 40 karanjis can be made by this recipe. Heat the oil for frying these karanji and fry it on medium flame until golden brown.
  9. Our crispy karanjis are ready to serve. This karanji is specifically made on occasion of Diwali. Do try it out and let me know in the comments, how it tastes?
