In a bowl, combine the soy sauce, cornstarch, salt, sugar, ginger and cayenne. Add pork; toss to coat and set aside. In a large skillet or wok, stir-fry onion, carrot and garlic in oil until crisp-tender. Remove with a slotted spoon and keep warm.

- Slice the pork on a bias then into bite sized pieces.
- Mix the spices. Then put the pork in a bowl.
- Add the spices to the pork . Measure the oil and soy sauce and pour on top. Mix well in a bowl to coat all the meat.
- Put the coated meat into ziplock bag. Let marinate at least 1 1/2 hours
- Get oil hot and deep fry the pork. Fry in batches making sure pieces don't stick together.
- When each batch is done move to paper towels to absorb excess oil.

Rinse pork chops, pat dry and place in a large dish. Add beaten egg, hot sauce, and remaining seasoning to pork chops, mix well. Sprinkle a bit of sesame seeds on top, then serve with rice! Salt and pepper both sides of the pork chops. Combine the flour and some cayenne, salt and black pepper.
