  5. Make ready 1 small piece Ginger *finely chopped
  6. Take 1 tablespoon Sake (Rice Wine)

  8. Prepare 1/2 tablespoon Sugar
  9. Prepare 1 tablespoon Toasted Sesame Seeds
  10. Prepare 1/2 sheet Toasted Nori *torn into small pieces

Whole mackerel comes cheap at most fish markets, and they're (fairly) easy to fillet following the hilariously detailed instructions in the River Cottage Fish Book. Combine lemon juice, salt, pepper and garlic in a small bowl and spoon mixture over flesh side of each fillet and place them skin side down onto the grill. Slice or flake the salted mackerel, remove the bones is optional. Put a skillet or Dutch with the oil to hot on low heat. Add the salted mackerel, sprinkle on the black pepper, add the ketchup, gently stir. Serve this canned mackerel pasta with some freshly grated parmesan, a sprinkle of red chilli flakes, and/or a squeeze of lemon juice (as desired).
