- In a pan heat the clarified butter 🧈 (ghee) and add the wheat flour to it. Roast it till the raw smell goes off. Keep it aside.
- In another pan heat up milk and roasted flour & mix well. Make sure there are no lumps. Then add custard powder to it. Cook it for 10-15 minutes till the milk reduces and thicken to desired consistency.
- Now add condensed milk to it & mix well. (You can also use sugar instead of condensed milk). Add cardamom powder and saffron to it.& switch off the flame.
- Let this mixture cool down and the pour this mixture to an icecream mould.& set it in the freezer initially for 2-3 hours. Then remove it from the freezer and churn it in the mixer blender jar.
- Now pour this mixture into kulfi moulds (add wooden sticks and chopped nuts at this stage) or you can also use any other icecream mould to set the kulfi as per your preference. Let it set in the deep freezer for 6-7 hours or overnight. Serve it. :)
