The ingredients needed to make Mawa kulfi:
- Take 1 litre full cream milk
- Make ready 250 gm mawa
- Make ready 100 gm sugar
- Get 1/2 tsp cardamom powder
- Get 1/4 cup mix chopped dry fruits
- Take 12-15 saffron strands
This evaporated milk is later chilled into kulfi matkas or kulfi molds to have the proper shape. The key ingredient of kulfi is mawa or khoya. If you add bread, mixture gets thicker easily so no need to heat up. Mix the condensed milk, evaporated milk, whipped cream, grated mawa, ground almonds, some chopped pistachios (leave some aside for garnishing), and rose water.
Instructions to make Mawa kulfi:
- Boil milk in pan, after boiling add saffron and boil till it reduce to half.
- Now add sugar and cook till sugar dissolve, add mawa and cook for 2 minutes. Add cardamom powder and chopped nuts and switch off the flame.
- Let it cool and pour to kulfi/candy mould, refrigerate in freezer for 8-10 hours.after that serve.
Can use a stand mixer for making this a homogeneous mixture. Put the above mixture either in kulfi moulds, or shot glasses, or a pan. Garnish on top with the remaining pistachios, saffron. Method Boil the milk and add in sugar , kesar and nuts then reduce a little on slow flame and stirring it in short intervals. Kulfi, the Indian version of ice-cream, is an ever popular and an all-time favourite of people across all age groups.
