Add sugar, coconut powder and mix well. Finely chop the malai , add to the milk and mix well. Pour the mixture into kulfi moulds and place in the freezer compartment overnight.
Instructions to make Tender Coconut Kulfi:
- In a non-stick pan or thick bottom Kadhai pour the milk and bring to boil. Then reduce the flame and let it simmer for some time till the milk reduces to 1/3 rd the quantity. Keep stirring the milk in between.
- Then add the sugar and coconut milk powder and cook for 2 to 3 minutes.
- Then add the chopped almonds or pistachios and finely chopped tender coconut pieces in the milk.Cook for 2 to 3 minutes more.
- By now the milk would have become thick. Turn off the heat and let it cool down.
- Then pour the reduced milk into kulfi moulds.Freeze them overnight.
- Before serving garnish with chopped almonds and pistachios and some slices of tender coconut if you like. Serve immediately. Enjoy your kulfi with family and friends.
Now remove from flame and add almond powder and desiccated coconut. Let the mixture cool to room temperature. Once cooled down, pour this mixture into kulfi moulds and let it set in refrigerator for couple of hours. Unmould the kulfi and roll it in the desiccated coconut mixed with powdered sugar and serve immediately. Using young, tender coconuts, the Coconut Lagoon Kulfi gives you a tropical punch in each flavorful bite and is topped with fresh grated coconut and pistachio nuts.
