Steps to make Lauki ki kulfi:
  1. Firstly wash a lauki and peel off. Then grate it in a bowl. Keep it aside.
  2. Now heat a pan and add milk. Boil the milk. After 3 boil turn off the flame and let it cool down.
  3. Then add grated lauki and boiled milk together into the mixer jar. Blend it coarse.
  4. Then transfer the mixture into a pan. Add jaggery and cardamom powder. (You can add any sweetner of your choice, here I am making healthier version so I am using jaggery)
  5. Now boil the mixture until it thickens properly. After thickens let it cool down for 5 minutes.
  6. Then pour the kulfi mixture into the kulfi moulds or matka or small glass. Cover it with aluminium foil and place it in a freezer. Freeze the kulfi for 8-10 hours.
  7. If you are using glass as a mould or kulfi mould then place the kulfi stick after 4-5 hours.
  8. Then sprinkle chopped Dryfruits on the top of the kulfi. Crush the dried rose petals with your hands. And enjoy the beautiful lauki ki kulfi.

The ingredients used here are same as lauki halwa. Only new addition is the khoya or mawa. Make it at home using this traditional recipe.
