  5. Cover the dish with foil paper and put it in the oven for 45 minutes. The time can vary from each oven but you can tell it is ready when the shells are soft and the sauce reduced.

Stuff uncooked manicotti generously with the cheese mixture, from both ends. Arrange manicotti in a single layer in a baking pan. Bring sauce to a boil and pour over manicotti, covering completely. Try using a baby spoon to fill the manicotti shells–it works great! Spoon ricotta mixture into prepared manicotti and place side by side into baking dish, repeating until all ricotta mixture has been used.
