This recipe combines ingredients typical in the Mughlai style of cooking—it's a perfect one-dish meal for when you have company. Mughlai chicken biryani is a tasty, mildly spicy, and aromatic dish authentic to Mughlai cuisine which is strongly influenced by the Turko-Persian cuisine of Central Asia, the region where the early Mughal emperors originally hailed from, and it has strongly influenced the regional cuisines of modern Afghanistan, Northern India, Pakistan, and Bangladesh.

- Get 4 cups Basmati rice
- Get 750 gms Chicken (big pieces)

- Get 15 Garlic Pearls
- Take 1 Cinnamon stick 1 piece

- Prepare 3 bay leaves
- Get 15 Almonds (soak in hot water for 30 min, remove skin)
- Take 2 tbsp Chilli powder
- Make ready 1 tsp Turmeric powder
- Make ready to taste Salt
- Get Handful Mint leaves
- Prepare 4 tbsp Coriander leaves (finely chopped)
- Get 1 Lime (juice)
- Prepare 3 tbsp Yoghurt
- Get 1 tsp Rose water
- Make ready Few Saffron threads (soak on warm milk)
Sharing my version of Mughlai biryani made with almond-melon seeds paste, curd, spices and fried onions (birista). Dum biryani, a classic dish of the Mughal Nizams is an eye-catching aromatic rice loved by all. We all love biryani, but when it comes to preparing them most of us, step back because of the tedious process. But trust me, once you learn the right process, it is such an easy breezy way of making restaurant style chicken dum biryani.
Steps to make Mughal dum biriyani:
- Wash the chicken, drain and marinate with salt, turmeric powder, 1tbsp chilli powder. Yogurt and keep aside.
- Cut onion, tomato, slit green chilli, grind ginger, garlic, cinnamon, clove, cardamom as thick fine paste.
- Grind almond as paste.
- Soak rice for at least 30 mins.
- Keep the big vessel on heat, add oil then add star anise, bay leaf, then add onion and green chilli, fry until brown. Now add tomato, chilli powder, mint and coriander leaves, ground masala and cook until the raw smell goes and oil separates. Now add almond paste, lime juice then stir it for 3 mins.
- Now add chicken, cover and cook for 15 min. Stir often. Then add water 1: 1and half then add salt. Let it boil. Drain the water from the rice and add it to the mixture. Mix it gently, cover and cook in high flame for 10 mins, then in medium flame for 10 minutes.
- Spread the ghee on top. Keep a dum plate on heat and keep the vessel on top, reduce flame, cover and cook for another 20 mins, now sprinkle saffron water and rose water. Cover tightly.
- Turn off the heat, let it stand for 15 min on the dum plate.
- Enjoy your tastiest Mughal biryani with raita or tangy brinjal curry.
