  7. Get Aloo Dum
  8. Make ready 500 gm small boiled Aloo/Potatoes (remove it's skin)
  9. Get 2 Tablespoon ginger garlic paste
  10. Get 1 pinch Hing/asafoetida
  11. Get 4 Tablespoon oil
  12. Prepare to taste Salt
  13. Make ready 1 Bay leaf
  14. Take 1 Teaspoon Garam masala powder
  15. Get 1 Teaspoon haldi (turmeric)powder
  16. Prepare 1/2 Teaspoon whole jeera/cumin seeds
  17. Make ready 2 Chopped Onions
  18. Get 1/2 teaspoon Saunf (Fennel seeds)
  19. Get 1/2 tsp Whole Dhania/Coriander seeds
  20. Get 2 Dry red chilli
  21. Prepare as needed Chopped Dhania/Coriander leaves

Bengali Aloo Dum or Alur Dum has this satiating blend of spices, creaminess of the yogurt and the. Luchi is a deep-fried flatbread made with plain flour or maida. It is similar to poori, which is made of wholemeal flour or atta.

Steps to make Luchi and Aloo Dum:
  1. Take a bowl add there Maida, salt, sugar, oil and water to it and Knead it properly and form a Dough and cover it.
  2. Now it's time to prepare Aloodum. Now switch on the flame and place a frying pan to it and dry roast all masala like Zeera, Dhania and Sauf (fennel seeds) Now switch off the flame and add there red chilli (remove it's seeds) and water to it.
  3. Now take a pan Switch on the gas and add there Oil and add there Aloo, little salt and turmeric powder fry it for 3 to 4 mins. Now transfer it to a pan.
  4. Now in the same pan add Bay leaf, chopped onions till it's little soft add chopped tomatoes and cook it. Add a pinch of hing, ginger garlic paste, haldi powder and fry it. Add here the soak prepared masala paste (grind it to make a fine paste). Now mix it properly and cook. When the masala get fried and add water, salt and fried Aloo to it and cover the lid and cook it for 10 mins in a low flame. Now add Garam masala powder and garnish it with dhania leaves and turn off the gas.
  5. Now heat a kadhai add there oil and prepare luchi (like we prepare our normal poori). Turn off the gas and serve it with Aloo Dum.

Luchi is a deep-fried flatbread made with plain flour or maida. It is similar to poori, which is made of wholemeal flour or atta. Aloor dum is a spicy baby potato curry. Traditionally, the aloor dum was made during winter - the new potatoes season. Luchi is similar to the puris while Aloo Dom is the Bengali rendition of Dum Aloo.
