Now add in sugar and keep mixing, the sugar will melt and the mix will get thick. Once the mix starts to leave the sides, add in cardamom powder and mix well. Beetroot salad is my Mom's recipe which she prepares for us from the childhood days onwards. From those days it is one of my favourite salads with a nice flavour of ginger and lemon juice.

Instructions to make Beetroot Peanut Kulfi:
  1. Boil milk n keep on slow flame for 10-15min. Mean while dilute custard powder in a 1/4cup of cold water.Add in a boiley milk.
  2. Churn beetroot. N coursly grind salted peanut.
  3. Now add beetroot paste mawa n condensed milk in a milk n stir cont.Add coursly grinded cardamom for 10min. More. Add coursly grinded peanuts.Let it cool on room temp.
  4. Pour mixture in a container.After 2hrs. Sprinkle salted peanuts N set in a freezer for 7-8hrs.
  5. Serve with boil faluda sev. Garnish kulfi with grated beetroot. Cut in to slices.Yummy delicious Beetroot Peanuts Kulfi is ready to serve.

The crunchiness of raw peanut and coconut pulls us to fill the entire stomach with only the salad. This is a simple puree which can be mixed with rice porridge or any other porridges too. For a variation i made beetroot puree as well. So it is more healthy and nutrition.
