Carrot Rice is an easy mixture of basmati rice mixed with ginger, onion and grated carrots that have been sautéed in just a bit of butter. To make the best simple carrot rice, you will need long grain rice. I use Basmati, but Jasmine rice or other types could also work. You will also need water, carrots, onion, garlic, ginger, ground cardamom (optional), a bay leaf, olive oil and salt.

Steps to make Carrot Rice:
    1. Cook the rice and let it cool completely. - - 2. Meanwhile heat 1 tbsp of ghee in kadai add fennel seeds, cashews. Roast till cashews change to golden brown. - - 3. Now add thinly sliced onion, minced green chilli, curry leaves. Saute a bit.
    1. Now add grated carrot, turmeric powder, hing, salt. Saute nicely. - - 5. Add graram masala saute a bit. Now add cooked rice to this. Mix thoroughly. Adjust salt. - - 6. Garnish with coriander leaves. Serve hot with any chips.

You can buy shredded carrots, or shred them yourself. This carrot rice has touch of sweetness from the carrots of course. And it has very slight tang from the lemon juice. These two flavors combined makes the dish fantastic. Many rice dishes I make for hubby's lunch box, this carrot rice is one of them.
