- Prepare Salt if needed, I didn't use it
Curry is a spice used especially from Indian, Bangladeshi, Pakistani, Sri Lankan, Thai or other South and Southeast Asian cuisines and NOT in South America… it is actually disliked in Brazil…. the yellow coloring in some Brazilian dishes is obtained with Oil of Dende… it goes well with dishes that use coconut milk and cilantro. The best part is how quickly it transports you to Brazil, all thanks to ingredients that can be found right in your pantry. The sauce is the kicker here, spicy, rich, creamy, and super fragrant. The last time I shared a Brazilian recipe with all of you lovely readers it became an overnight hit!
Steps to make Brazilian curry:
- Chop onions, garlic and chillies.
- Fry onions and chillies gently in oil. When soft, add garlic, cook for 2-3 mins
- Add coconut milk, stir and cook for 2-3 mins. Add peanut butter, juice of 2 limes and both stock cubes
- Cook for about 5 mins, add cup of water if too thick
- Add chopped chicken and cook for 8-10 mins. Add prawns and cook for further 4-5 mins.
- Serve with rice, coriander and chopped cashew nuts :)
