- Get Laksa Curry Soup:
- Get 1 tsp oil

- Get 1 stalk lemongrass - finely sliced
- Get 3 cloves garlic
- Make ready 2 tbsp cashews
- Take 1 tsp lime juice
- Make ready 1 tbsp shrimp paste
- Prepare 3 cups veggie broth or water
- Get 1 can coconut milk about 1.5 cups and can add some more water if needed
- Take 1 lime - cut in wedges
Heat oil in a large saucepan over medium-high. Shake in a few drops of Thai or Vietnamese fish sauce. Chicken - I love making this with drumsticks or bone in skin on thighs because the flesh that falls off the bone looks and tastes like the chicken in Laksa that is served at proper Malaysian joints.
