Melt butter in a pan with a little oil and add in the bubble and squeak. Brush with a little melted butter and oil and place under a hot grill until golden brown. Top with crispy bacon, poached egg and parsley before serving. Heat the butter in a large frying pan, add the potato mixture and smooth it flat with a spatula.

  2. Melt a large knob of butter in a medium frying pan. Once foaming add the onion and fry for a few minutes
  3. Add the shredded cavolo nero and fry for another 3 minutes
  4. Leave to cook for a few minutes. Pop under the grill until browned.
  5. Add all the potato veg mixture, stir fry then mash down into a thick cake. Grate a load of parmesan over the top. Season with salt and pepper
