Tomato rice is a simple south Indian rice dish made with lots of tomatoes & spices. It is not a traditional dish so each home or region has their own way of making it. As the name indicates this tomato rice is made using tomatoes alone and no vegetables are used except onion. In a large pot with a tight fitting lid, melt the bacon grease over medium high heat.

Instructions to make Tomato Rice:
  1. Heat 1 tbsp of Ghee in medium flame. Add mustard seeds, cumin seeds, urad dal and channa dal. When channa dal start to change colour add cashews. Roast cashews crispy.
  2. Now add green chilli,, crushed ginger and onion. Once onion change colour add chopped tomatoes. Add turmeric, chilli and coriander powder. Add bit of salt. Add chopped mint, close with lid and let lit cook until tomatoes turn mushy.
  3. Add rice and mix gently. Adjust salt and garnish with coriander leaves. - - Serve hot.

Add the onions and cook until translucent and tender. Add the chicken broth and tomatoes. Making Tomato Rice on Stove-Top If you don't have a pressure cooker and want to make tomato rice on stove-top, follow the same steps until adding the rice and water. Once you add the water, cover the pan with a lid. A handful of the tomatoes are cooked with scallions in the rice, while the rest are served on top.
