  1. Take 1 cup purée of strawberry
  2. Get 1/2 cup sugar
  3. Take 1 cup fresh bread crumbs
  4. Make ready 1/2 cup coarsely ground cashews
  5. Get 1 cup almond powder
  6. Take 1/2 cup milk powder
  7. Get 1 teaspoon ghee

For preparing strawberry barfi, take a vessel and cook mashed strawberries with milk on low flame. Allow it to cook till the milk evaporates. Add ghee, sugar and grated coconut. Mix it well till it becomes a bit thick.

Instructions to make Strawberry barfi:
  1. Wash strawberries and purée in a food processor. Take a slice of bread or a bun and make fine crumbs.
  2. In a wide non stick pan add the strawberry purée and cook on medium heat. Once it starts boiling add the sugar and bread crumbs and cook for 3 to 4 minutes. Add the ghee, milk powder and almond powder and mix well. Keep on stirring. Once the ghee separates and it forms a dough turn off the gas. Transfer in a greased proof tray to set if you want to make squares or transfer in a plate to cool. After 10 minutes use a mould to make barfi and decorate to your taste.

Grease a plate with ghee and pour in the cooked mixture. Heat the ghee in a non-stick pan, add the khoya and coconut and saute for a minute. Add the strawberries and sugar and mix well and let the water evaporate. Garnish it with pista and cut into squares and serve fresh. Strawberry Burfi is another variation of traditional Indian burfi.
