- Make ready 1 cup Rava

Rava kesari is a simple and quick south Indian dessert recipe prepared with fine rava/sooji, sugar, ghee, and dry fruits. The key ingredient in this recipe is kesar, it gives the orangish color to the dish. Rava kesari's complement dessert dish is north-Indian Suji ka Halwa. Rava Kesari is a scrumptious delight made of semolina doused in aromatic ghee and roasted nuts, sweetened with sugar.
Steps to make Rava Kesari (Sooji Delight):
- In heavy or nonstick kadai melt 2 tbsp of ghee in medium flame, once melted add cashews, roast until golden crispy colour. Drain this and keep aside. Now add raisins and saute until it puffs up. Remove and keep aside with cashews.
- Reduce the flame to low add 1 cup rava to the remaining ghee and roast well. Be careful don't burn the rava. Once rava start to gives nice aroma keep aside.
- Now take sugar in a sauce pan with milk or water. Add saffron stands, food colour extract. Keep the pan on stove top on medium flame. Bring the sugar water to a boiling consistency.
- Now reduce the flame slowly add roasted rava in one hand, same time stir with another hand. Be careful with it mixture will splutters. Stir and mix very well. Break lumps. - - Cook rava mixture on the medium flame until rava cook completely. Rava should absorb all the water and the mixture starts to thickening. Once this started add ghee little by little and stir.
- I added 1/4 cup ghee, you can add more if you want. More ghee more taste!!!!!! - - Once finished with adding ghee add roasted cashews, raisin, cardamom powder and pinch of edible camphor.
- Finally add another tsp of ghee and switch off the flame.. - - Serve hot or warm.#mycookbook
