  20. Prepare 2 tbsp Coriander (Chopped)
  21. Get 2 tbsp Mint (Chopped)
  22. Take 1 tsp Salt
  23. Take 1 tbsp Vegetable Oil
  24. Get For the rice
  25. Get 2 cups Long Grain Basmati Rice
  26. Make ready 1 tbsp Ghee
  27. Get 2-3 Cloves
  28. Take 2 Bay Leaves
  29. Make ready 1 inch Cinnamon
  30. Make ready 1 tsp Lemon Juice
  31. Get 2 tsp Salt
  32. Prepare For Layering
  33. Get 2 tbsp Ghee
  34. Make ready 1 tbsp Coriander (Chopped)
  35. Take 1 tbsp Mint (Chopped)
  36. Get 10-12 strands Saffron (Soaked in 2 tbsp milk)
  37. Make ready 1/4 cup Golden Fried Onion
  38. Take 10-12 Cashew Nuts (Fried)
  39. Take 10-12 Raisins (Fried)
  40. Take 1 1/2 tbsp Kewra Water

In simple words Biryani is a rice and curry casserole. The curry can be meat based or vegetable based. Similar to some layered and baked pasta dishes, the curry is layered with semi-cooked rice - later to be baked or slow cooked till the rice is completely done and the curry or gravy has been absorbed by the rice. Vegetable biryani is an aromatic rice dish made by cooking basmati rice with mix veggies, herbs & biryani spices.

Instructions to make Vegetable Biryani:
  1. For the vegetables - Heat ghee and oil in a pan. Fry the vegetables on high heat for 4-5 minutes. Remove the vegetables in a bowl.
  2. For marinating the vegetables - Mix the ingredients for marinating in a bowl. Add the sautéed vegetables in it and mix well. Cover and keep aside for an hour.
  3. For the rice - Wash the rice and soak in enough water for 30 minutes. Heat ghee in a pan. - Add cloves, bay leaf, cinnamon stick and fry for a few seconds. Drain the rice and add in the pan along with 4 cups of water, lemon juice and salt. Cover and cook only heat until 80 % done.
  4. For Layering the Biryani - Add the marinated vegetables in a heavy bottom pan. Fry for 10 minutes. - layer with cooked rice. Drizzle ghee on top. Sprinkle coriander leaves, mint leaves, saffron soaked in milk, kewra water, fried onion, fried cashew nuts and raisins on top. Cover the pan tightly with a lid. Let the biryani cook for 15-20 minutes. Fluff with a fork gently to mix the layers. Serve hot with Raita.
  5. Note: Keep a griddle over the low flame if you do not have a thick bottom pan, and then keep the pan over the griddle and let the biryani cook for 15-20 minutes. Fluff with a fork gently to mix the layers.
