- In a large bowl whisk eggs, add remaining ingredients except garnish and combine well. Spoon evenly into tomatoes. You may not use it all, do not overfill but fill to just the top.Put 2 sausage sices on top of each tomato.
- Bake 20 to 30, minutes until egg is set and a thin knife inserted in center comes out clean. Carefully transfer to plates, garnish each with parsley, basil and parmesan cheese.
The onions should be the same quantity as the tomato (after cutting them). Add egg mixture, and cook until edges begin to set. Gently lift edges of egg mixture with a wide spatula, tilting pan to allow uncooked egg mixture to come in contact with pan. Spoon tomato over half of omelet; fold in half. Precook meats and vegetables such as mushrooms, onions and peppers, shred cheese and slice raw tomatoes, scallions and fresh herbs.
