- Brown ground beef in medium skillet; drain.
- Preheat Oven to 350°F (F)
- Dice the onion
- Dice the gutted and cleaned green pepper
- In Large mixing bowl, crack the 12 eggs into. No shell floaties please!
- Now add the milk, salt, pepper, and taco seasoning. (Throw in a pinch of oregano & garlic powder for an extra kick)
- Beat this mixture until well blended.
- Now add the cheese, green pepper, onion, and (now cooled) ground beef.
- Lightly grease or spray a muffin tin, and pour mixture in each cup about 3/4th the way full.
- Place them in the oven and bake for about 20 minutes, or until a light golden brown on top.
- Remove from oven and let cool. Serve with salsa and sour cream, or pop em in some storage containers and take with you for an on the go breakfast.
