Jeedipappu Pakam or Jeedi Pappu Achu is a very famous and traditional Andhra sweet made with whole cashew nuts and jaggery. The texture and taste of Kaju Pakam is completely different from Kaju Chikki. Cashews are one of the more expensive nuts, but they also have an incredibly buttery, sweet flavor and soft texture that makes us go gaga. They're tasty raw, but they become crunchy and fantastic if you dress them up with herbs and spices and roast them until they're golden brown. (They also happen to be pretty great to cook with, too.) In a small bowl combine brown sugar, cashews, salt, and ginger; set aside.

Instructions to make Cashew sweet:
  1. Roast cashew and blend it, make fine powder. sieve the cashew powder before adding to avoid any pieces of cashew.
  2. In a pan add sugar and water make sugar syrup on medium flame, stir and boil on medium flame till you reach on string consistency.
  3. Now add in powdered cashew powder and stir continuously on low flame, the mixture forms a paste and start to thicken.
  4. Once the mixture separates from pan and add ghee or butter.
  5. Mix well till the mixture forms a thick paste.
  6. Switch off the flame and grease the butter paper with ghee. transfer the cashew dough on to the butter paper.
  7. Allow it to cool 5 to 10 minutes. - grease your hand with little ghee and knead 30 seconds. be careful as the dough will be very hot.
  8. Once you get smooth dough, cover with butter paper and roll slightly thick and live it for 4 to 5 hour or it’s completely cool. - After that cut the dough into diamond shape or any shape.

This is a versatile cashew cheese sauce that's totally plant-based. I use it as a pasta sauce, as a pizza topping, over roasted veggies, on tacos and for grilled cheese. It doesn't reheat well, so I don't suggest making a double batch to use throughout the week. Cashews are rich in fiber, protein, and healthy fats. They also contain a variety of vitamins, minerals, and health-protective beneficial plant compounds.
