Place the peppers in a large saucepan and cover with water. Drain, rinse with cool water and set aside on paper towels to drain. - Add 1 can of original Rotel tomatoes (drained)
- Remove bell peppers from boiling water, drain, and place in a baking dish to cool partially
- Add aprox. 2 cups of shredded cheese to browned hamburger/Rotel mix (please remember to drain hamburger before adding to cheese
- Stuff peppers about 3/4 of the way full of hamburger/Rotel/cheese mixture
- Heap wild rice you previously made on top and sprinkle with another pinch of shredded cheese
- Bake at 350 for 15 minutes or until cheese is nicely melted
Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. Pour a small amount of water into the bottom of the baking dish and drizzle the peppers with a little olive oil. Uncover and bake until the peppers are soft.
