The ingredients needed to make Stuffed Bell Peppers:
  1. Make ready 1 packages sausage
  2. Make ready 1/4 onion, chopped
  3. Make ready 1 packages 90 second rice (any flavor)
  4. Make ready 1/4 grated parmesan cheese
  5. Prepare 1 shredded cheese

Omit the cheese for a vegan variation. Serve with additional tomato sauce, if desired. Cut top off peppers and remove seeds. Drain and rinse in cold water; set aside.

Instructions to make Stuffed Bell Peppers:
  1. Cut off the tops of the peppers and hollow out the insides. Dice up the usable parts of the tops (you need them later).
  2. Make sure when you buy the peppers that they can sit up on their own.
  3. Sauté the onion & diced pepper (that you saved earlier). They don't need to be cooked to death, just a little bit.
  4. Now brown the sausage into little crumbles.
  5. Preheat the oven to 375.
  6. Cook the 90 second rice (I used brown rice).
  7. Mix the rice, sausage, onion/pepper, & parmesan all together in a large bowl.
  8. Stuff the peppers with the mixture, fill 'em up! My mix got me 6 peppers.
  9. Bake for 30 minutes then remove & top each one with shredded cheese & bake for 10 minutes more.
