  7. Make ready Rosemary, fresh is better but I only had dried
  8. Get Chilli, I used birds eye

Combine the olive oil, vinegar, bay leaves and garlic in a small saucepan and heat just until warm over low heat. Remove from the heat and stir in the lemon rind, thyme, rosemary and fennel seeds. Rinse the black olives so their juices don't discolor the other olives. Drain all the other olives in a colander, place them in a large bowl and set aside.

Instructions to make Marinated Olives:
  1. Gently heat the olive oil over low heat, add all the ingredients expect for the olives. Do not let the garlic burn or brown.
  2. Allow to cool to warm or room temperature then mix in the olives and transfer to a jar. Cover with lid and store at room temperature.
  3. Note: I did not measure any of the ingredients out, I added to my taste, I did have to add a little bit more of everything when the olives were in the jar a day later as they were slightly bland for us.

Heat a small dry pan over medium-high heat and, once hot, add the coriander and fennel seeds. These Marinated Olives are just like the ones at the restaurant, and are very easy to make. They are great to make in advance for parties or entertaining, because you can set them out as a hands-off hors d'oeurve. I never understood the appeal of marinated olives for most of my life. Strain both olives and add all of the ingredients into a medium bowl.
