Heat the olive oil and butter in a large skillet or wok, and add the grated courgettes, crushed garlic and harissa. Heat the butter in a large saucepan until foaming. Add the whole garlic clove and courgettes. You want the garlic to flavour the sauce ever so slightly.

  5. In parallel boil water with some olive oil and salt, and make al sentence pasta. Cooking time will vary depending on pasta used.
  6. Serve with a salad - rocket and cherry tomato salad goes particularly well.
