  3. Sauté onions, garlic and raisins in olive oil until translucent and soft. Add 1 tbsp of the butter mix, along with the carrots and parboiled rice.
  4. Stuff the chicken with the rice mixture, then sear in Dutch pot. Add a lime in the cavity, top with more compound butter and sprigs of oregano, cover and cook in oven at 180C for 1 hr and 45 mins.

Most roast chicken recipes call for a shallow roasting pan fitted with a rack to elevate the bird. This ensures that hot air will circulate around the chicken, giving every inch a crispy, golden brown bake. Make sure to note how much your bird weighs, as this determines how long to roast a chicken in the oven. Set the chicken in a shallow roasting pan, breast side up. Rinse the chicken, then dry it very well with paper towels, inside and out.
