The standard recipe for Yangzhou fried rice includes rice, eggs, meat, fish, mushrooms, bamboo shoots, and peas. You can find a traditional (not vegan) recipe here. Our plant-based version strays from traditional in terms of ingredients, but is similarly colorful and cooks the rice twice for a "fried" effect.

The ingredients needed to make Vegan Fried Rice:
  1. Prepare 1 Cup day old Rice
  2. Get Half block of Firm Tofu
  3. Make ready 2 Tablespoons Mushroom Soy Sauce
  4. Prepare 2 pinches Salt
  5. Prepare 1 Bell Pepper
  6. Get 1 Clove Garlic
  7. Prepare 2 Tablespoons Oil

Start out by adding some chopped onions, crushed garlic, minced ginger, green curry paste and sesame oil to a frying pan and fry until the onions are softened. To make this vegan fried rice you're gonna need oil, veggies, tamari or soy sauce and rice, of course. As you can see, the ingredients are so easy to get and you can use your favorite vegetables. We've used garlic, onion, carrot, corn and peas.

Instructions to make Vegan Fried Rice:
  1. Wash and dice your bell pepper. Cube your tofu into a similar size to your bell pepper. Finely chop your garlic.
  2. In a pan heat the oil until almost smoking and then add the bell pepper. Add 1 pinch of salt and fry until it looks slightly char grilled.
  3. Add the tofu and add the other pinch of salt. Fry together until the tofu is a light golden colour.
  4. Add the garlic last to prevent burning. Fry for 30 seconds before adding the rice.
  5. Add the soy sauce and turn the heat down. Stir fry together until the rice is hot then serve.

You can also add fresh or ground ginger. This means adding the vegan butter to the wok, chopping & dicing the veggies, and mixing together the soy sauce, rice wine vinegar, and sugar for the vegan fried rice sauce.
